Is Decaf Coffee Made With Chemicals? How to Tell From the Bag

Short answer: Some decaf is, some isn’t. Swiss Water, Mountain Water, and CO2 decaf don’t use solvents like methylene chloride or ethyl acetate. A lot of other decaf does. If a bag of decaf doesn’t say how it was made, ask the roaster. Certified organic decaf can’t use methylene chloride.

Why this has been in the news

In late 2023, environmental and consumer groups asked the FDA to ban methylene chloride in food, including decaf coffee, because it’s considered a likely cause of cancer. In 2024, the EPA banned most other uses of the chemical. As of this summer, the FDA still allowed it in decaf with a residue limit of 10 parts per million, had reopened public comments on how a phase-out would work, and had not announced a decision.

The amount left in roasted decaf is very small, and regulators have allowed it for decades. Some people would still rather avoid it, and that’s a reasonable call.

How each method works

Swiss Water Process

Green, unroasted beans soak in water that already holds coffee’s flavor compounds, minus the caffeine. The caffeine moves out of the beans into the water, and carbon filters catch it. No added chemicals. It’s one of the most common methods for specialty and organic decaf, and roasters who use it almost always say so on the bag.

Mountain Water Process

A similar water-based method done in Mexico. Also no chemical solvents.

CO2 Process

Pressurized carbon dioxide pulls the caffeine out and then evaporates away. It’s good at keeping flavor, but the equipment is expensive, so you’ll see it less often from small roasters.

Sugarcane or EA decaf

Uses ethyl acetate, a compound found naturally in fruit and often made from fermented sugarcane for this purpose. It’s a solvent, but a milder one, and it’s common with Colombian decaf. Bags may call it “sugarcane process” or “naturally decaffeinated.”

Methylene chloride

The cheapest and most common method for mass-market decaf. The beans are soaked or steamed with the solvent, which pulls out the caffeine. Most of it evaporates during drying and roasting, and the FDA caps what’s left at 10 parts per million. Bags rarely name it. If a decaf lists no method at all, this may be the reason.

How much caffeine is left?

In the US, decaf generally means about 97 percent of the caffeine has been removed. That usually leaves a few milligrams in a cup, compared with roughly 80 to 100 milligrams in regular coffee. If you need zero caffeine for a medical reason, know that decaf isn’t zero.

Where organic comes in

Certified organic decaf can’t use methylene chloride, so most organic decaf is made with Swiss Water, Mountain Water, or CO2. That makes the USDA Organic seal a handy shortcut if you’re trying to avoid it. It doesn’t tell you the exact method, though, so if that matters to you, look for the method on the bag too.

What to look for on the bag

  • A named method: Swiss Water, Mountain Water, CO2, or sugarcane.
  • The USDA Organic seal: rules out methylene chloride.
  • No method listed: email the roaster. Good roasters answer this kind of question quickly.
  • A roast date: decaf beans are more porous after processing, and many roasters say they go stale a bit faster than regular coffee.
