An Organic Pantry for Pasta Night: Pasta, Tomatoes and Olive Oil

Short answer: A good pasta night needs four things: pasta, tomatoes, olive oil and a little patience. You can buy all four organic. This guide shows what we carry and how to pick.

Pasta

Pick the pasta by who is eating it.

  • Organic Sourdough pasta, $4.49. Made in Italy from fermented grains and a sourdough starter. It has a mild tang. The maker presses it through bronze dies, so the surface is rough and sauce sticks to it. Shapes include farfalle, spaghetti, penne and fusilli. See Organic Sourdough Spaghetti.
  • Organic Whole Wheat Penne Rigate, $3.99. Made from whole durum wheat grown on small family farms in Italy. The pasta maker has worked since 1887. See Organic Whole Wheat Penne Rigate.
  • Organic Gluten Free Brown Rice pasta, $5.69. The listing says it is Regenerative Organic Certified. Shapes include penne, farfalle, spaghetti, bucatini and lasagna. See Brown Rice Penne.
  • Organic Gluten Free Rice and Lentil pasta, $5.69. Made with only rice and lentils. It has more protein and cooks up firm. See Rice and Lentil Elbows.
  • Organic Grain Free Cassava pasta, $5.69. Free from gluten, grains, legumes and the top 8 allergens, says the maker. See Cassava Penne.

Cook all pasta in a lot of salted water. Taste it a minute before the time on the box.

Tomatoes

Good tomatoes matter more than almost any other ingredient in a red sauce.

  • Organic San Marzano Whole Peeled Tomatoes, $7.99. These carry the D.O.P. name. They grow only in the Agro Sarnese-Nocerino region of Italy, in volcanic soil. Workers pick them by hand between July and September. See the San Marzano tomatoes.
  • Organic Whole Peeled Tomatoes, $4.69. Grown on small family farms in Italy and packed the day they are picked. The listing says they are Regenerative Organic Certified. See Organic Whole Peeled Tomatoes.
  • Organic Italian Diced Tomatoes, $4.99. Packed in glass jars with no additives or salt. See Organic Italian Diced Tomatoes.
  • Organic Tomato Paste, $3.29. Comes in a BPA-free glass jar. A spoonful adds depth to soups and stews. See Organic Tomato Paste.

When you do not want to cook a sauce

Two jarred sauces cost $8.99 each. Organic Marinara is made with organic Italian tomatoes and extra virgin olive oil. The maker says it has no added sugar or preservatives. Organic Tomato Basil is the other option.

Olive oil

Organic Extra Virgin Olive Oil comes from three old olive varieties of the Veneto region: Favarol, Grignano and Nostrano. A small group of farmers grows them. A 500 ml bottle is $21.99. A 1 L bottle is $42.99. Use it raw, on bread, salad or finished pasta, so you taste it. See the 500 ml bottle or the 1 L bottle.

Something sweet

Organic Fruit Spreads, $5.59 to $5.99, use hand-harvested fruit from small family farms. The maker cooks them at low heat and uses less sweetener. Try Strawberry or Wild Berry.

A simple dinner

  1. Cook the pasta in salted water.
  2. Warm the marinara, or crush the tomatoes in a pan with a pinch of salt.
  3. Toss the pasta with the sauce and a spoon of pasta water.
  4. Finish with a thin line of olive oil.
